The Sugar Cane Decaf process is a natural and flavor-preserving method for decaffeinating coffee. It extracts caffeine from the coffee using a natural byproduct of sugar cane and water. This process avoids the high temperatures used in other decaffeination processes, thus preserving the coffee's flavors.
First, the green coffee beans are soaked in hot water. This step dissolves the caffeine and other soluble substances from the beans. The soaking prepares the beans for subsequent extraction. In the next step, the water, which already contains the caffeine and other soluble substances, is passed through a special filter medium. This filter medium is based on sugarcane and has the ability to selectively bind the caffeine while preserving the flavor-relevant components of the beans. This effectively removes the caffeine without affecting the aromas. After the caffeine has been removed, the beans are returned to the water. This step serves to rehydrate the beans and restore the lost aromas and flavor characteristics. This way, the taste of the coffee remains virtually unchanged and a high-quality decaffeinated coffee is produced.
