Pink Bourbon is the second coffee gem from the El Zacatin farm. This farm focuses on producing exceptional quality coffee, not only paying close attention to the best possible processing and preparation, but also striving to give it a distinctive identity through modern and experimental methods. Coffee farmer Eduardo Fernández has collected and cultivated the most exclusive and exotic varieties found in Colombia and around the world. His farm in La Concordia, in the Antioquia region of Colombia, allows him to take advantage of the high altitude of his land, as La Concordia lies at over 2,000 meters above sea level. The Pink Bourbon variety is a mutation of the traditional Bourbon variety, but unlike the original, its color is a delicate pink, giving it its name. The roasted beans are characterized by a unique flavor profile and a vibrant body.
Eduardo processed this coffee naturally, meaning he let the whole coffee cherry dry for over 30 days in traditional African beds. Along with other fermentation and pre-selection processes, this gave the final coffee a distinctive character. Its notes offer a subtle hint of red wine, which develops through fruits like grapes and some stone fruit. In short, enjoying an exotic coffee from El Zacatin is an adventure.
