This coffee comes from central Kenya, the area where most coffee is grown. It was produced in the Nyeri district by members of the Rutuma Farmers Cooperative Society. The FCS was founded in 1995 as a testament to the resilience and entrepreneurial spirit of Kenyan coffee farmers. It currently operates seven wet mills, one of which is Githima. Located near Karatina, this wet mill processes coffee cherries from over 300 smallholder farmers, whose farms average less than one hectare in size. In addition, the FCS and the mill utilize environmentally friendly farming methods and invest in community projects focused on education, healthcare, and economic empowerment. After selective hand-harvesting, the ripe cherries are delivered to the mill where they are crushed, fermented, and washed. A unique aspect of the Githima process is the double fermentation, which helps enhance the complexity and sweetness of this coffee. The beans are then dried in the sun on raised beds until they reach the optimal moisture content of 11-12%.
