Finca La Providencia is located at approximately 1,500 meters in the hills of Chalchuapa, one of El Salvador's oldest coffee towns. Café Pacas has managed the farm since 2007 and has since made a name for itself with consistent quality work. What sets La Providencia apart from other fincas is its character as an experimental farm: over 54 different varieties are cultivated here on small plots under scientific observation to compare productivity, disease resistance, and cup quality. For a coffee family that has been rooted in cultivation for five generations, this is no coincidence, but rather a philosophy.

This coffee comes from a parcel of only 1.5 hectares, reserved specifically for this variety. The plants grow in nutrient-rich sandy loam soil under a dense canopy of shade and benefit from slow ripening at this altitude. During natural processing, the cherries are dried with the entire fruit skin on raised beds, turned several times daily, and covered at night. This is laborious, but it is precisely this patient process that gives the coffee its density and complexity.

Santa Ana is one of El Salvador's most renowned coffee regions, and Café Pacas is one of the names that has helped shape this reputation. Internationally, El Salvador has gained significant attention again in recent years – roasters who previously focused primarily on Ethiopia or Colombia are increasingly discovering what the fincas of this region have to offer.
