This decaffeinated coffee is produced by select farms in the Popayan region. The coffee is ground locally and transported to Caldas, where it is decaffeinated. The decaffeination process for this coffee is unique. The caffeine is extracted from the coffee using a natural byproduct of sugarcane and water. This method avoids the excessive temperatures common in other decaffeination processes, resulting in a coffee with increased sweetness that is much closer to the original, caffeinated coffee in roast and flavor.
The major advantage of this process, aside from the flavor profile, is that it was developed and is carried out in Colombia. This allows for vertical integration of the supply chain without the additional costs and transportation of coffee to decaffeination plants in Mexico, Canada, or Germany, and the profits remain in the country of origin.
