This decaffeinated coffee is produced by select farms in the Popayan region. The coffee is ground locally and transported to Caldas, where it is decaffeinated. The decaffeination process for this coffee is unique. The caffeine is extracted from the coffee using a natural byproduct of sugar cane and water. This process avoids the excessive temperatures common in other decaffeination processes and leaves a coffee with increased sweetness that is much more similar in roast and flavor to the original, caffeinated coffee.
The great advantage of this process, aside from the flavor profile, is that it was developed and is carried out in Colombia. This allows for verticalization of the supply chain without the additional costs and transportation of coffee to decaffeination plants in Mexico, Canada, or Germany, and the profits remain in the country of origin.
